Meet Hayley our super friendly & talented Chef this winter!

Hayley first fell in love with cooking at the age of 10 when she would help her grandmother bake cakes, but it would be many years before she followed her passion, first entering the police force before becoming a finance director for a marketing company.  

Those wonderful summer days spent cooking with her grandmother were never forgotten, however, and when she wasn’t working she was in the kitchen, baking cakes and learning about cake artistry.  This was to serve her well when she opened a coffee shop in Norfolk, where her cakes and fondant toppings saw her struggling to cope with demand!

 

 

It would not be until her mid 40s when she followed her dream and became a private chef on the Cote d’Azur and the French Alps, working for a number of HNWIs including a Formula 1 driver and a Russian oligarch!  When she wasn’t working she was attending cookery schools around the world – from Khmer curries and Japanese sushi to French cuisine and Mexican street food.

Her work has taken her to some spectacular locations including the small, private island of Cavallo.  Located between Corsica and Sardinia, Hayley was able to provide a high end dining experience to the rich and famous, encountering such stars as Beyoncé and Kanye West during her time there.

 

After six years of traveling and honing her culinary skills, she returned to England in 2015 to open her own small restaurant in a South Oxfordshire pub.  This enabled her to be close to her three children and newly born grandson while developing a tasty menu of home cooked favourites.  The restaurant quickly developed into a local favourite and her range of delicious pies became well known across the region, causing Game of Thrones actor John Bradley (Sam Tarley) to drop in to sample them.

But the travel bug is still strong and the pull of the Alps in the winter season has always been difficult to resist which is why Hayley has left her restaurant in the capable hands of her husband of 35 years and returned to the snow.

Away from cooking and her family, Hayley loves walking, reading and writing.  She is a regular contributor to Shield, a monthly lifestyle magazine, where she supplies recipes and has a regular column writing about her experiences.  She has a long standing love affair with France and all things French, and spends a lot of time in the Languedoc region where she has an apartment on the coast.  She has a love/hate relationship with skiing – she loves to ski but the skis don’t always love her.  Hopefully, after another season of trying, she will finally conquer those blues!
